Description

John Dory is seabed living  fish with a flat olive-yellow body, large eyes, long spines on the dorsal fin and a large dark ‘eye spot’ on its flank. The eye spot is used to confuse both predators and prey, which are scooped up in its big mouth.  Chefs love John Dory because of its white, boneless, meaty firm and flavoursome flesh.  It has been described as some as the most delicious fish that appears at the table.
